Ingredients

  • 180 grams Gluten-free all-purpose flour blend
  • 25 grams Cornstarch (or tapioca starch)
  • 150 grams Unsalted butter (softened)
  • 75 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, using an electric hand whisk or a stand mixer.

Step 3

Add the vanilla extract and salt to the creamed mixture and mix until combined.

Step 4

In a separate bowl, combine the gluten-free flour blend and cornstarch. Gradually sift this dry mixture into the wet ingredients, mixing gently with a spatula or on low speed until the dough starts to come together.

Step 5

Turn the dough out onto a clean surface and gently knead it until smooth. Avoid overworking the dough.

Step 6

Roll the dough between two sheets of parchment paper to about 1cm thickness. Use a cookie cutter to cut out shapes and transfer them to the prepared baking tray.

Step 7

Chill the tray in the refrigerator for 10–15 minutes to help the biscuits hold their shape while baking.

Step 8

Bake in the preheated oven for 18–20 minutes or until the edges are just starting to turn golden. Keep an eye on them to avoid overbaking.

Step 9

Remove the biscuits from the oven and let them cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the biscuits in an airtight container for up to one week. Enjoy!
