Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 2 cloves Garlic
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Wash and peel the potatoes, then dice them into 1/2-inch cubes.

Bring a medium pot of water to a boil. Add the diced potatoes and cook for 5 minutes, or until they are just fork-tender but not fully cooked. Drain and set aside.

Peel and dice the onion. Mince the garlic cloves.
