Ingredients

  • 1 cup Red lentils
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 1 medium Carrot, diced
  • 3 pieces Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 6 cups Chicken or vegetable broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 piece Lemon, juiced
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Set aside.

Step 2

In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until soft and translucent.

Step 3

Add the diced carrot and minced garlic to the pot, stirring occasionally, and cook for another 3 minutes.

Step 4

Stir in the ground cumin, ground coriander, and turmeric powder, cooking the spices with the vegetables for 1 minute.

Step 5

Add the rinsed lentils, chicken or vegetable broth, and tomato paste to the pot. Stir well to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 25-30 minutes until the lentils and vegetables are tender.

Step 7

Use an immersion blender to puree the soup to your desired consistency, making it smooth or leaving some texture if preferred. Alternatively, you can blend in batches using a standard blender.

Step 8

Season the soup with salt, black pepper, and lemon juice. Stir to combine and taste, adjusting seasoning as needed.

Step 9

Ladle the soup into bowls and garnish with freshly chopped cilantro.

Step 10

Serve hot and enjoy with a side of bread or pita for a complete meal.
