Ingredients

  • 3 cups all-purpose flour
  • 1 cup brown sugar
  • 0.5 cup unsalted butter
  • 1 teaspoon baking soda
  • 1 cup boiling water
  • 1 cup molasses
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish or pan.

Step 2

In a large mixing bowl, combine the all-purpose flour and brown sugar.

Step 3

Cut in the unsalted butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Reserve 1 cup of this mixture for the crumb topping.

Step 4

To the remaining crumb mixture, add the baking soda, cinnamon, nutmeg, and salt, stirring to combine.

Step 5

In a separate medium bowl, combine the boiling water and molasses until fully mixed. Allow the mixture to cool slightly, about 5 minutes.

Step 6

Beat the egg into the molasses mixture until well blended.

Step 7

Pour the wet mixture into the dry mixture and stir until the batter is smooth and well combined.

Step 8

Pour the batter into the prepared greased baking dish and spread it evenly.

Step 9

Sprinkle the reserved crumb mixture evenly over the top of the batter.

Step 10

Bake the cake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 11

Allow the cake to cool in the pan on a wire rack for 15-20 minutes before slicing and serving.

Step 12

Serve warm or at room temperature. Pair with coffee or tea for a delightful treat.
