Directions

Step 1

Place the dried shiitake mushrooms in a large bowl and cover them with 2 cups of warm water. Let them soak for 20-30 minutes until soft. Once softened, slice the mushrooms thinly, and reserve the soaking liquid.

In a medium saucepan, add 4 cups of water along with the reserved mushroom soaking liquid (strain it through a fine mesh sieve or cheesecloth to remove any grit). Bring to a gentle simmer.

While the water is heating, cut the tofu into small cubes (about 1/2 inch) and thinly slice the scallions. Set them aside.

Once the water begins to simmer, add the sliced shiitake mushrooms and the dried wakame seaweed. Allow them to simmer for 5-7 minutes until the wakame rehydrates and expands.
