In a large bowl, mix together the yogurt, olive oil, lemon juice, tomato paste, minced garlic, paprika, cumin, coriander, cayenne pepper, salt, and black pepper to create the marinade.
Add the chicken thighs to the bowl and coat each piece thoroughly with the marinade. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
For the toum garlic sauce, add the peeled garlic cloves and salt to a food processor. Process until finely minced, scraping down the sides as necessary.
While the processor is running, slowly drizzle in the vegetable oil and lemon juice alternately, a little at a time, to create a creamy, emulsified garlic sauce. Continue until all the oil and lemon juice are incorporated. Set aside in the refrigerator.
Preheat your grill or barbecue to medium-high heat. Oil the grates to prevent sticking.
Remove the chicken thighs from the marinade, shaking off excess marinade, and thread onto skewers if desired. Discard the remaining marinade.
Grill the chicken on each side for 4-6 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through, with nice grill marks.
Remove the chicken from the grill and let it rest for 5 minutes before serving.
Serve the grilled chicken with the toum garlic sauce on the side. Pair with warm pita bread, fresh salad, or rice for a full meal.
