Ingredients

  • 500 grams Ground lamb or beef (or a mix of both)
  • 1 medium Onion, finely chopped or grated
  • 0.5 cup Fresh parsley, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika (optional for color and flavor)
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the ground lamb or beef, grated onion, chopped parsley, cumin, coriander, salt, black pepper, paprika, and minced garlic. Mix the ingredients thoroughly with your hands until well combined.

Step 2

Cover the mixture with plastic wrap and let it rest in the refrigerator for at least 30 minutes to allow the flavors to blend.

Step 3

Preheat your grill or stovetop grill pan to medium-high heat.

Step 4

If using wooden skewers, soak them in water for 20 minutes to prevent them from burning during cooking.

Step 5

Divide the meat mixture into 8 equal portions. Using your hands, mold each portion of meat around a skewer, forming an elongated oval shape about 1 inch thick.

Step 6

Brush the skewers lightly with olive oil to prevent sticking and to help achieve a nice char on the grill.

Step 7

Place the skewers on the preheated grill and cook for about 6-7 minutes per side, or until the meat is fully cooked and has developed a nice char. Rotate the skewers occasionally to ensure even cooking.

Step 8

Remove the shish kababs from the grill and let them rest for a couple of minutes.

Step 9

Serve the kababs hot with warm pita bread, hummus, tahini sauce, or a side of fresh salad.
