Prep Time:20 mins

Ingredients

  • 24 whole Medjool dates
  • 0.5 cup Cream cheese
  • 0.25 cup Blue cheese (optional, for variation)
  • 24 whole Almonds or pecans
  • 12 slices Bacon strips
  • 2 tablespoons Honey (optional, for drizzle)
  • 1 pinch Salt
  • 1 pinch Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Slice each Medjool date along one side to create an opening and remove the pit. Set the dates aside.

Step 3

In a small bowl, mix the cream cheese and blue cheese (if using) until smooth. Add a pinch of salt and black pepper to the cheese mixture for flavor.

Step 4

Fill each pitted date with about 1 to 2 teaspoons of the cheese mixture. Place one almond or pecan in the center of the filling for a crunchy surprise.

Step 5

Cut each bacon strip in half, so you have 24 shorter strips. Wrap each stuffed date tightly with a half-strip of bacon and secure it with a toothpick if needed.

Step 6

Arrange the bacon-wrapped dates seam-side down on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the bacon is crispy and golden brown, turning them halfway through for even cooking.

Step 7

Remove the stuffed dates from the oven and transfer them to a serving platter. Drizzle lightly with honey for added sweetness, if desired.

Step 8

Let the dates cool for a few minutes before serving. Enjoy these sweet, salty, and creamy bites!
