Ingredients

  • 1 pound Sea scallops
  • 1 cup All-purpose flour
  • 1 cup Cornmeal
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Egg
  • 0.5 cup Buttermilk
  • 2 cups Vegetable oil (for frying)
  • 1 Lemon wedges
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the sea scallops under cold water and pat them dry with paper towels. Remove the tough muscle if it is still attached to the scallops.

Step 2

In a shallow bowl, combine the flour, cornmeal, paprika, garlic powder, salt, and black pepper. Mix well.

Step 3

In a second shallow bowl, whisk the egg and buttermilk together until smooth.

Step 4

Heat the vegetable oil in a large skillet or deep pan over medium-high heat. The oil should reach 350°F (175°C) for frying.

Step 5

Dip each scallop into the buttermilk mixture, ensuring it is fully coated, then dredge it in the flour and cornmeal mixture. Tap off any excess coating.

Step 6

Carefully place the coated scallops into the hot oil. Fry them in batches to avoid overcrowding the pan.

Step 7

Cook the scallops for 2-3 minutes per side, or until golden brown and crispy. Use tongs to turn them over gently.

Step 8

Remove the scallops from the pan and place them on a plate lined with paper towels to drain any excess oil.

Step 9

Serve the fried scallops hot with lemon wedges on the side and a sprinkle of fresh parsley for garnish, if desired.
