Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 large, thinly sliced potatoes
  • 2 medium, sliced into rounds carrots
  • 1 cup uncooked white rice
  • 28 ounces canned diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it into small chunks. Drain any excess grease and set aside.

Step 3

In a 9x13-inch baking dish, layer the following ingredients in order: the cooked ground beef, diced onions, sliced potatoes, and sliced carrots.

Step 4

Sprinkle the uncooked rice evenly over the top of the vegetable layers.

Step 5

In a large bowl, combine the canned diced tomatoes (with their juices), beef broth, salt, black pepper, garlic powder, and paprika. Mix well.

Step 6

Pour the tomato and broth mixture evenly over the ingredients in the baking dish, ensuring the liquid is distributed across the layers.

Step 7

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 50 minutes.

Step 8

After 50 minutes, remove the foil and check if the rice and potatoes are tender. If they’re fully cooked, sprinkle the top with shredded cheddar cheese if desired, and return the dish to the oven uncovered for an additional 10 minutes or until the cheese is melted.

Step 9

Remove the dish from the oven and let it rest for 5 minutes before serving.

Step 10

Spoon into bowls and serve warm. Enjoy your hearty Shipwreck casserole!
