Ingredients

  • 300 g fresh shiitake mushrooms
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 2 cloves garlic cloves, minced
  • 1 tsp rice vinegar
  • 1 tsp honey (or maple syrup for vegan option)
  • 2 stalks green onions, thinly sliced
  • 1 tbsp toasted sesame seeds
  • 0.5 tsp red pepper flakes (optional)

Directions

Step 1

Clean the shiitake mushrooms by gently wiping them with a damp paper towel to remove any dirt. Remove the stems and slice the caps into thin strips.

Step 2

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and red pepper flakes (if using). Set aside.

Step 3

Heat the olive oil in a large skillet over medium-high heat.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute until fragrant, being careful not to burn it.

Step 5

Add the sliced shiitake mushrooms to the skillet and spread them out in an even layer. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden and slightly crispy around the edges.

Step 6

Pour the sauce mixture over the mushrooms and toss until evenly coated. Cook for an additional 2-3 minutes until the sauce thickens and clings to the mushrooms.

Step 7

Remove the skillet from heat and stir in the green onions.

Step 8

Transfer the mushrooms to a serving dish and sprinkle with toasted sesame seeds. Serve warm as a side dish or over rice or noodles.
