  • 5 cups vegetable broth
  • 1 cup canned diced tomatoes
  • 1 piece bay leaf
  • 1 teaspoon (dried) thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (chopped, for garnish) fresh parsley
  • 1 tablespoon (optional, for brightness) lemon juice

Directions

Step 1

Turn on the pressure cooker and select the sauté function. Add olive oil and let it heat up for 1-2 minutes.

Add the chopped onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and cook for an additional minute until aromatic.
