Turn on the pressure cooker and select the sauté function. Add olive oil and let it heat up for 1-2 minutes.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic and cook for an additional minute until aromatic.
Add the diced carrots, celery, and shiitake mushrooms to the pot. Cook for 4-5 minutes, stirring occasionally.
Add the rinsed lentils, vegetable broth, diced tomatoes, bay leaf, thyme, smoked paprika, salt, and black pepper. Stir to combine.
