  • 500 grams fresh green beans
  • 200 grams shiitake mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium shallot
  • 2 garlic cloves
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 cups water
  • 2 cups ice

Directions

Step 1

Trim the ends off the green beans and set aside.

Step 2

Bring 4 cups of water to a boil in a medium-sized pot. Add the green beans and blanch them for 2-3 minutes until they turn bright green.

Step 3

Prepare an ice bath by filling a large bowl with 2 cups of ice and cold water. Immediately transfer the blanched green beans to the ice bath to stop the cooking process. Let them sit for 2 minutes, then drain and set aside.

Step 4

Clean the shiitake mushrooms by gently wiping them with a damp cloth. Trim off the tough stems and slice the caps thinly.

Finely dice the shallot and mince the garlic cloves.
