  • 4 heads baby bok choy

  • 2 stalks scallions

Directions

Step 1

Clean the shiitake mushrooms by wiping them with a damp paper towel and trim off the stems. Slice the mushrooms thinly.

Rinse the baby bok choy thoroughly to remove grit and chop into bite-sized pieces, separating the stems from the leafy greens.

Mince the garlic cloves and peel and finely grate the 1-inch piece of ginger.
