Ingredients

  • 14 oz firm tofu
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 3 tbsp dry sherry
  • 3 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 8 oz snow peas, trimmed
  • 1 tsp sesame oil
  • 0.25 tsp red pepper flakes
  • 2 scallions, sliced (optional garnish)

Directions

Step 1

Press the tofu to remove excess moisture: Wrap the tofu block in a clean kitchen towel, place a heavy object on top, and let it press for 10-15 minutes.

Step 2

Cut the tofu into 1-inch cubes and toss lightly with the cornstarch to coat evenly. This will help it crisp up while cooking.

Step 3

In a small bowl, whisk together the soy sauce, dry sherry, and sesame oil. Set the sauce aside.

Step 4

Heat 2 tablespoons of vegetable oil in a large nonstick or cast iron skillet over medium-high heat. Add the tofu cubes and cook for 6-8 minutes, turning occasionally, until golden and crispy on all sides. Remove the tofu from the pan and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic, ginger, and red pepper flakes, and sauté for 30 seconds until fragrant.

Add the snow peas to the skillet and stir-fry for 2-3 minutes until they are bright green and tender-crisp.

Return the cooked tofu to the skillet and pour in the sauce. Toss everything together to coat evenly. Cook for 1-2 minutes, allowing the sauce to heat through and lightly coat the ingredients.
