Ingredients

  • 500 grams Cremini or button mushrooms
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic cloves
  • 60 milliliters Dry sherry
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly cracked black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Clean the mushrooms with a damp paper towel or lightly rinse them and pat them dry. Slice them into 1/4-inch thick slices.

Step 2

Mince the garlic cloves and set aside.

Step 3

In a large skillet, heat the unsalted butter and olive oil over medium-high heat until the butter is melted and begins to foam.

Step 4

Add the sliced mushrooms to the skillet in a single layer. Cook for 5-7 minutes without stirring, allowing them to brown on one side.

Step 5

Stir the mushrooms and continue cooking for another 3-4 minutes until they are golden brown and tender.

Step 6

Reduce the heat to medium and add the minced garlic and fresh thyme leaves. Cook for 1 minute, stirring constantly, until the garlic is fragrant.

Step 7

Pour in the dry sherry and deglaze the pan by scraping up any browned bits from the bottom of the skillet. Allow the sherry to simmer and reduce for about 2 minutes.

Step 8

Season the mushrooms with salt and freshly cracked black pepper. Stir to combine.

Step 9

Remove the skillet from heat and optionally garnish with freshly chopped parsley before serving.

Step 10

Serve the sherry mushrooms warm as a side dish or topping.
