  • 3 tablespoons Unsalted butter

  • 2 large Shallots, finely minced

  • 500 grams Cremini or button mushrooms, cleaned and sliced
  • 100 milliliters Dry sherry
  • 150 milliliters Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh parsley, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a large, wide skillet over medium heat. Add the butter and olive oil, allowing the butter to melt and sizzle gently.

Step 2

Add the minced shallots and garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant, stirring often to avoid browning.
