Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium shallot, finely minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3 tablespoons dry sherry
  • 1.5 cups cheddar cheese, shredded
  • 0.5 cup parmesan cheese, grated
  • 1 cup cooked lump crabmeat, picked over for shells
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Add the minced shallot and sauté until soft and translucent, about 2 minutes.

Step 3

Sprinkle in the flour and whisk continuously for 1-2 minutes to cook out the raw taste of the flour.

Step 4

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Cook until the mixture thickens slightly, about 3-4 minutes.

Step 5

Stir in the dry sherry and reduce the heat to low.

Step 6

Add the shredded cheddar cheese and grated parmesan cheese a handful at a time, stirring until fully melted and smooth.

Step 7

Gently fold in the cooked crabmeat, cayenne pepper, paprika, and salt. Stir until heated through.

Step 8

Transfer the fondue to a warmed fondue pot or heatproof serving dish and garnish with fresh parsley, if using.

Step 9

Serve immediately with accompaniments such as crusty bread, steamed vegetables, or crackers for dipping.
