Ingredients

  • 500 grams Cherry tomatoes
  • 2 tablespoons Olive oil
  • 2 small Shallots
  • 2 cloves Garlic cloves
  • 60 milliliters Dry sherry
  • 1 tablespoon Honey
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Wash the cherry tomatoes thoroughly and pat them dry with a clean kitchen towel.

Step 2

Peel and finely dice the shallots. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Add the diced shallots to the skillet and sauté for 2-3 minutes until softened and translucent.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 6

Increase the heat to medium-high and add the cherry tomatoes to the skillet. Cook for 3-4 minutes, stirring occasionally, until the tomatoes begin to blister and soften.

Step 7

Pour in the dry sherry and stir to combine. Allow the liquid to simmer for 2-3 minutes, slightly reducing and infusing the tomatoes with its flavor.

Step 8

Drizzle the honey over the tomatoes and sprinkle in the fresh thyme leaves, salt, and black pepper. Stir gently to coat the tomatoes evenly.

Step 9

Cook for another 2-3 minutes, allowing the sauce to thicken slightly.

Step 10

Remove the skillet from the heat. Taste and adjust seasoning if needed.

Step 11

Garnish with freshly chopped parsley if desired, and serve warm.
