Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 1 cup Unsalted butter, softened
  • 1.5 cups Granulated sugar
  • 4 Large eggs
  • 2 teaspoons Vanilla extract
  • 0.75 cups Dry sherry
  • 0.5 cups Sour cream
  • 0.25 cups Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 10-cup bundt pan to ensure easy release of the cake after baking.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together until it turns light and fluffy, about 3-4 minutes.

Step 4

Add the eggs to the butter mixture one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Reduce the mixer speed to low and gradually add the dry sherry and sour cream, alternating with the flour mixture from step 2. Begin and end with the flour mixture. Mix just until the batter is smooth and well combined, but do not overmix.

Step 6

Pour the batter evenly into the prepared bundt pan and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Step 8

Remove the cake from the oven and let it cool in the pan for 10 minutes. Carefully invert it onto a wire rack and allow it to cool completely.

Step 9

Once the cake is fully cooled, dust the top with powdered sugar for a decorative touch.

Step 10

Slice and serve as a delicious dessert or with a cup of tea or coffee. Enjoy!
