Ingredients

  • 12 ounces spaghetti
  • 2 cups cherry tomatoes
  • 1 medium zucchini
  • 4 cloves garlic
  • 3 tablespoons olive oil
  • 1 cup dry sherry
  • 1 cup fresh basil leaves
  • 0.5 cup Parmesan cheese
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 lemon

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, halve the cherry tomatoes and dice the zucchini into small cubes. Mince the garlic cloves finely.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, cooking until fragrant, about 1 minute.

Increase the heat to medium-high and add the cherry tomatoes and zucchini. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften and begin to caramelize.
