Ingredients

  • 227 grams Unsalted butter
  • 200 grams Shrimp (peeled, deveined, cooked)
  • 2 cloves Garlic
  • 2 tablespoons Sherry (dry)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Smoked paprika
  • 0.25 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 1 tablespoon Fresh parsley (chopped)
  • 0.25 teaspoon Freshly ground black pepper

Directions

Step 1

Take the unsalted butter out of the refrigerator and let it come to room temperature until soft and spreadable.

Step 2

Roughly chop the cooked shrimp into small pieces and set aside.

Step 3

Peel and finely mince the garlic cloves.

Step 4

In a small skillet over medium heat, add the minced garlic and dry sherry. Sauté for 1-2 minutes until the garlic is fragrant and the sherry has slightly reduced. Remove from heat and let it cool slightly.

Step 5

In a food processor, combine the softened butter, chopped shrimp, sautéed garlic and sherry mixture, lemon juice, smoked paprika, cayenne pepper, salt, and black pepper.

Step 6

Pulse the food processor in short bursts until the mixture is creamy but still has some texture from the shrimp.

Step 7

Transfer the shrimp butter to a bowl and gently fold in the chopped parsley to add freshness.

Step 8

For best results, refrigerate the shrimp butter for at least 1 hour to allow the flavors to meld together. However, it can be served immediately if needed.

Step 9

Spread the shrimp butter on crackers, warm toast, or crusty bread. It can also be used to enhance seafood dishes like pasta or grilled fish.
