Ingredients

  • 1.5 cups Long-grain white rice
  • 3 cups Chicken broth
  • 0.5 pounds Ground pork
  • 0.5 pounds Ground beef
  • 0.25 pounds Chicken livers, finely chopped
  • 1 medium Yellow onion, finely diced
  • 1 medium Green bell pepper, finely diced
  • 2 stalks Celery stalks, finely diced
  • 4 cloves Garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Vegetable oil
  • 3 stalks Scallions, sliced thinly (for garnish)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Rinse the white rice under cold water until the water runs clear. Set it aside to drain.

Step 2

In a large heavy-bottomed skillet or Dutch oven, heat the vegetable oil over medium heat.

Step 3

Add the ground pork, ground beef, and chicken livers to the skillet. Cook for 5-7 minutes, breaking it up into crumbles, until browned and fully cooked. Remove the meat from the skillet and set aside, leaving behind about 1 tablespoon of rendered fat.

Step 4

To the same skillet, add the onion, green bell pepper, and celery. Sauté for 5-7 minutes until softened and fragrant.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds until aromatic.

Step 6

Return the cooked meat mixture to the skillet. Stir in the Cajun seasoning, paprika, dried thyme, salt, and black pepper until everything is evenly coated with the spices.

Step 7

Add the rinsed and drained rice to the skillet, stirring to combine it with the meat and vegetables.

Step 8

Pour in the chicken broth. Stir to ensure all ingredients are evenly distributed, then bring the mixture to a gentle boil.

Step 9

Reduce the heat to low, cover the skillet or Dutch oven, and let the rice cook undisturbed for 18-20 minutes, or until the rice is tender and the liquid is fully absorbed.

Step 10

Turn off the heat and let the rice sit, covered, for 5 minutes.

Step 11

Fluff the rice with a fork, then garnish with sliced scallions and chopped parsley before serving.

Step 12

Serve hot as a main dish or a hearty side.
