Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 pieces shallots, finely chopped
  • 3 cloves garlic cloves, minced
  • 0.5 cup dry sherry
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Dredge the chicken in all-purpose flour, shaking off any excess.

Step 3

In a large skillet, heat 2 tablespoons of butter and the olive oil over medium-high heat.

Step 4

Add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown and nearly cooked through. Remove the chicken from the skillet and set aside.

Step 5

Lower the heat to medium and add the remaining tablespoon of butter to the skillet.

Step 6

Stir in the shallots and garlic, cooking for 2-3 minutes until softened and fragrant.

Step 7

Deglaze the skillet by pouring in the dry sherry, scraping up any brown bits from the bottom of the pan.

Step 8

Allow the sherry to reduce by half, about 2-3 minutes.

Step 9

Pour in the chicken broth and bring the mixture to a gentle simmer.

Step 10

Stir in the heavy cream and thyme, cooking for 2-3 minutes until the sauce begins to thicken.

Step 11

Return the chicken breasts to the skillet, spooning the sauce over them.

Step 12

Cover and let the chicken simmer in the sauce for 8-10 minutes, or until fully cooked and tender.

Step 13

Garnish with freshly chopped parsley and serve warm. Pair with rice, mashed potatoes, or roasted vegetables for a complete meal.
