Ingredients

  • 2 cups Cooked white rice
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 0.75 cup Granulated sugar
  • 2 pieces Large eggs
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 cup Raisins
  • 2 tablespoons Sherry (optional)
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (165°C). Lightly grease a 2 to 2.5-quart baking dish with butter or nonstick spray.

Step 2

In a large bowl, whisk together the whole milk, heavy cream, granulated sugar, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined.

Step 3

Stir in the cooked white rice, raisins, and sherry (if using). Ensure the mixture is evenly combined.

Step 4

Pour the mixture into the prepared baking dish and dot the top with small pieces of the unsalted butter.

Step 5

Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish to create a water bath.

Step 6

Carefully transfer the roasting pan to the preheated oven. Bake for 50-60 minutes, or until the pudding is set but still has a slight jiggle in the center.

Step 7

Remove the baking dish from the water bath and allow the pudding to cool slightly before serving. It will thicken more as it cools.

Step 8

Serve warm or chilled, optionally garnished with a sprinkle of cinnamon or whipped cream. Enjoy your Sherry's Baked Rice Pudding!
