Ingredients

  • 3.5 cups All-purpose flour
  • 1 tablespoon Ground ginger
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Ground cloves
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 0.75 cup Brown sugar, packed
  • 1 large Egg
  • 0.5 cup Molasses
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a large mixing bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt. Set aside.

Step 2

In a separate large bowl, beat the softened butter and brown sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the egg, molasses, and vanilla extract to the butter mixture, and beat until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. The dough will be soft but shouldn't be sticky.

Step 5

Divide the dough into two portions, flatten each into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour to chill.

Step 6

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 7

On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Cut out shapes using gingerbread boy cookie cutters, re-rolling scraps as needed.

Step 8

Transfer the cut-out shapes to the prepared baking sheets, leaving about 1 inch of space between each cookie.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are just beginning to set but the centers are still soft.

Step 10

Allow the cookies to cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.

Step 11

Decorate as desired with royal icing or other decorations, or enjoy plain for a soft, spiced treat.
