Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 medium, finely chopped shallots
  • 2 minced garlic cloves
  • 8 ounces, sliced cremini mushrooms
  • 1/3 cup dry sherry
  • 3/4 cup low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 tablespoon, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Heat a large skillet over medium heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 2

Add the chopped shallots to the skillet and sauté for 2-3 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional minute, being careful not to let the garlic burn.

Step 4

Increase the heat to medium-high and add the sliced mushrooms. Sauté for 8-10 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.

Step 5

Pour in the dry sherry and deglaze the skillet, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until the sherry has mostly reduced.

Step 6

Stir in the chicken or vegetable broth and fresh thyme. Let the mixture simmer for 3-4 minutes to reduce slightly.

Step 7

Lower the heat to medium and add the heavy cream. Stir well to combine and cook for another 3-5 minutes, until the sauce has thickened slightly.

Step 8

Season the sauce with salt and black pepper to taste.

Step 9

Remove from heat and garnish with chopped fresh parsley, if desired. Serve warm over steaks, chicken, pasta, or potatoes.
