Ingredients

  • 1 lb Carrots
  • 3 tbsp Unsalted butter
  • 2 tbsp Light brown sugar
  • 0.25 cup Dry sherry
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Peel the carrots and slice them into uniform thin rounds, about 1/4-inch thick, for even cooking.

Step 2

In a large skillet, melt the butter over medium heat until fully melted and slightly foaming.

Step 3

Add the sliced carrots to the skillet and stir to coat them evenly with the butter.

Step 4

Sprinkle the brown sugar over the carrots and stir well until the sugar begins to melt and coat the carrots.

Step 5

Pour the dry sherry into the skillet and stir. Reduce the heat to low and cover the skillet with a tight-fitting lid.

Step 6

Simmer the carrots for 10-12 minutes, stirring occasionally, until they are tender but not mushy. Add a tablespoon of water if the skillet becomes too dry during cooking.

Step 7

Once the carrots are tender, remove the lid and increase the heat to medium-high to allow the liquid to reduce to a glaze. This should take about 2-3 minutes.

Step 8

Season the carrots with salt and ground black pepper. Stir to distribute the seasoning evenly.

Step 9

Remove the skillet from heat and transfer the sherried carrots to a serving dish.

Step 10

Garnish with freshly chopped parsley if desired, and serve immediately.
