Ingredients

  • 12 oz rotini pasta
  • 2 cups cherry tomatoes
  • 1 cup black beans
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 4 green onions, sliced
  • 0.5 cup cilantro, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup bottled picante sauce
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool completely. Set aside.

Step 2

While the pasta cooks, halve the cherry tomatoes, rinse and drain the black beans (if using canned), and prepare the remaining vegetables by dicing the red bell pepper and slicing the green onions.

In a large mixing bowl, combine the cooked and cooled pasta, cherry tomatoes, black beans, corn kernels, diced red bell pepper, sliced green onions, chopped cilantro, and shredded cheddar cheese.
