  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch casserole dish.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion and green bell pepper until softened, about 3-4 minutes. Remove from heat.
