Ingredients

  • 2 pounds beef stew meat
  • 4 medium potatoes
  • 4 large carrots
  • 3 celery stalks
  • 1 large yellow onion
  • 3 garlic cloves
  • 4 cups beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 0.33 cup all-purpose flour
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup frozen peas

Directions

Step 1

Cut the beef stew meat into bite-sized chunks if not already done. Pat them dry with paper towels to help achieve a better sear.

Step 2

Season the beef with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 3

Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches to avoid overcrowding, searing each side. Transfer the browned beef to the slow cooker.

Step 4

Peel and chop the potatoes and carrots into bite-sized pieces. Dice the celery and yellow onion. Mince the garlic cloves.

Step 5

Sprinkle the all-purpose flour over the beef in the slow cooker, toss to coat evenly.

Step 6

Add the chopped potatoes, carrots, celery, onion, and garlic to the slow cooker.

Step 7

In a bowl, whisk together the beef broth, tomato paste, the remaining 1 teaspoon of salt, 1/2 teaspoon of black pepper, dried thyme, and bay leaves. Pour the mixture over the ingredients in the slow cooker.

Step 8

Stir gently to combine everything and cover the slow cooker with a lid.

Step 9

Cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Step 10

During the last 30 minutes of cooking, add the frozen peas to the slow cooker and stir.

Step 11

Remove and discard the bay leaves before serving.

Step 12

Serve the beef stew hot, optionally with crusty bread or over mashed potatoes for a complete meal.
