Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 2 minced garlic cloves
  • 1 pound ground lamb (or beef for Cottage Pie)
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 pounds potatoes (Yukon Gold or Russet)
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and cube the potatoes. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until tender.

Step 3

While the potatoes cook, heat olive oil in a large skillet or saucepan over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until softened.

Step 4

Add the minced garlic and cook for an additional minute until fragrant.

Step 5

Add the ground lamb (or beef) to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.

Step 6

Stir in the tomato paste, beef stock, and Worcestershire sauce. Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 7

Stir in the peas and corn, and season the mixture with salt and pepper to taste. Remove from heat and set aside.

Step 8

Once the potatoes are tender, drain them and return them to the pot. Add butter, milk, and parmesan cheese (if using). Mash until creamy and smooth, then season with salt and pepper.

Step 9

Transfer the meat and vegetable mixture to a 9x13-inch (or similar size) baking dish, spreading it into an even layer.

Step 10

Top the meat mixture with the mashed potatoes, spreading them evenly to completely cover the filling. If desired, use a fork to create decorative ridges on the surface.

Step 11

Bake the Shepherd's Pie in the preheated oven for 20-25 minutes, or until the mashed potatoes are golden and the filling is bubbling around the edges.

Step 12

Let the pie cool for 5 minutes before serving. Enjoy your hearty, homemade Shepherd's Pie!
