Ingredients

  • 4 medium Tomatoes
  • 1 large Cucumber
  • 1 medium Bell pepper
  • 1 small Red onion
  • 1 small bunch Parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 0.5 cups Feta cheese (optional)

Directions

Step 1

Wash all the vegetables thoroughly under running water.

Step 2

Dice the tomatoes into small, bite-sized pieces and transfer them to a large mixing bowl.

Peel the cucumber if desired (especially if the skin is thick or waxy) and dice it into small cubes. Add to the bowl with the tomatoes.
