Peel and dice the potatoes into large chunks. Peel, seed, and dice the butternut squash.
Place the potatoes and squash into a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
Drain the potatoes and squash, then mash them together with 2 tablespoons of butter and the milk. Season with a pinch of salt and pepper. Set aside.
Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
Add the ground beef or lamb to the skillet. Cook until browned, breaking up the meat with a wooden spoon, about 5 minutes.
Stir in the tomato paste, Worcestershire sauce, thyme, salt, and pepper. Mix well.
