  • 4 large russet potatoes, peeled and quartered
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 large egg yolk, beaten

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced onion, carrots, and minced garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
