  • 1 pound ground lamb
  • 2 tablespoons olive oil

  • 3 minced garlic cloves
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 2 pounds, peeled and chopped Yukon Gold potatoes
  • 4 tablespoons butter
  • 0.5 cup milk
  • 0.25 cup, grated (optional) Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and chop the Yukon Gold potatoes, then place them in a large pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

While the potatoes are boiling, heat the olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned, breaking it apart with a wooden spoon. Remove the lamb from the skillet and set aside, draining any excess fat if necessary.

In the same skillet, add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5-7 minutes.

Spread the lamb and vegetable mixture evenly in a 9x13-inch baking dish. Top with the mashed potatoes, spreading them evenly to cover the filling completely.

If desired, use a fork to create decorative ridges on the mashed potatoes to help them brown. Place the baking dish on the middle rack of the oven and bake for 20-25 minutes, until the top is golden and slightly crispy.
