Ingredients

  • 1 pound ground lamb or beef
  • 1 medium onion, finely chopped
  • 1 large carrot, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 4 tablespoons butter
  • 1.5 pounds potatoes, peeled and cubed
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and cube the potatoes. Place them in a large pot of salted water, bring to a boil, and cook until tender, about 15 minutes. Drain and return the potatoes to the pot.

Step 3

Mash the potatoes with 2 tablespoons of butter and the milk until creamy. Season with 0.5 teaspoon of salt and black pepper. Set aside.

Step 4

In a large skillet over medium heat, melt the remaining 2 tablespoons of butter. Add the chopped onion and diced carrot. Cook for 5-7 minutes until softened.

Step 5

Add the minced garlic and sauté for an additional minute until fragrant.

Step 6

Add the ground lamb or beef to the skillet. Cook until browned, breaking up the meat with a spatula, about 5-7 minutes. Drain any excess fat.

Step 7

Stir in the tomato paste, flour, Worcestershire sauce, and broth. Reduce the heat and let it simmer for 5-7 minutes until the mixture thickens slightly.

Step 8

Stir in the frozen peas, ensuring all vegetables and meat are evenly combined. Season with the remaining 0.5 teaspoon of salt and more black pepper to taste.

Step 9

Spread the meat mixture evenly into a baking dish (9-inch square or similar size).

Step 10

Spread the mashed potatoes over the meat mixture, smoothing out the top with a spatula.

Step 11

If desired, sprinkle a pinch of paprika on top for color.

Step 12

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling at the edges.

Step 13

Let the Shepherd's Pie cool for 5 minutes before serving. Enjoy!
