Ingredients

  • 1 pound ground lamb
  • 1 yellow onion, finely chopped
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup low-sodium beef broth
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and cubed
  • 6 tablespoons unsalted butter
  • 0.5 cup heavy cream
  • 1 cup shredded cheddar cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet over medium heat, cook the ground lamb until browned. Drain any excess fat and transfer the lamb to a plate.

Step 3

In the same skillet, add the chopped onion and diced carrots. Sauté for 5 minutes until softened.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the tomato paste, Worcestershire sauce, and thyme. Stir to coat the vegetables evenly.

Step 6

Pour in the beef broth and bring the mixture to a simmer. Add the peas and browned lamb back to the skillet, stirring to combine.

Step 7

Season with salt and black pepper. Let the mixture simmer for 5-7 minutes until slightly thickened. Remove from heat.

Step 8

While the filling is cooking, place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes or until tender.

Step 9

Drain the potatoes and mash them using a potato masher or ricer. Stir in the butter and heavy cream until smooth and creamy. Season with a pinch of salt.

Step 10

Spread the lamb mixture evenly into a 9x13-inch baking dish.

Step 11

Top with the mashed potatoes, spreading them out evenly with a spatula. If desired, sprinkle shredded cheddar cheese on top.

Step 12

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbling.

Step 13

Let the Shepherd's Pie rest for 5 minutes before serving. Enjoy!
