  • 1 medium carrot, diced
  • 1 stalk celery stalk, diced
  • 1 medium zucchini, diced
  • 2 cloves garlic cloves, minced
  • 1.5 cups cooked lentils
  • 1 cup crushed tomatoes
  • 0.5 cups vegetable broth
  • 1 tablespoon coconut aminos or soy sauce
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons dried rosemary
  • 0.5 cups frozen peas

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Steam the cauliflower florets until tender, about 8-10 minutes.

Step 3

Transfer the steamed cauliflower to a blender or food processor. Add almond milk, nutritional yeast, garlic powder, and a pinch of salt. Blend until creamy and smooth. Set aside.

Heat the olive oil in a large skillet over medium heat. Add the chopped onion, carrot, celery, and zucchini. Sauté for 5-7 minutes until softened.
