Ingredients

  • 2 heads Cauliflower
  • 4 tablespoons Butter
  • 0.25 cups Heavy cream
  • 1 teaspoons Garlic powder
  • 1 teaspoons Salt
  • 0.5 teaspoons Pepper
  • 2 tablespoons Olive oil
  • 1.5 pounds Ground beef or lamb
  • 1 medium Onion, diced
  • 1 medium Carrot, diced
  • 2 units Celery stalk, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 0.5 cups Beef broth
  • 1 tablespoons Worcestershire sauce
  • 0.5 cups Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the cauliflower into florets and steam or boil them for about 10-12 minutes, or until fork-tender.

Step 3

Transfer the cooked cauliflower to a food processor along with the butter, heavy cream, garlic powder, salt, and pepper. Blend until smooth and creamy. Set aside.

Step 4

In a large skillet over medium heat, heat the olive oil. Add the diced onion, carrot, celery, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 5

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed.

Step 6

Stir in the tomato paste, beef broth, and Worcestershire sauce. Let the mixture simmer for 5 minutes to thicken. Season with additional salt and pepper to taste.

Step 7

Stir in the frozen peas, then remove the skillet from heat.

Step 8

Transfer the meat mixture to a 9x13-inch baking dish, spreading it out evenly.

Step 9

Spoon the cauliflower mash over the meat mixture, spreading it into an even layer with a spatula.

Step 10

Bake the Shepherd's Pie in the preheated oven for 20-25 minutes, or until the top is lightly golden and bubbling around the edges.

Step 11

Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Step 12

Enjoy your low-carb Shepherd's Pie!
