  • 3 cups Cauliflower florets
  • 1 medium Russet potato, peeled and diced
  • 0.25 cup Skim milk
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

In a large pot, bring water to a boil. Add the cauliflower florets and diced potato, cooking for 10-12 minutes until fork-tender. Drain and set aside.

While the vegetables cook, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion, carrots, celery, and garlic. Sauté for 5 minutes until softened.

Add the lean ground turkey to the skillet. Break it apart with a wooden spoon and cook until no longer pink, about 5-7 minutes.
