  • 100 milliliters milk
  • 100 grams aged cheddar cheese, grated
  • 1 tablespoon canola oil
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Start by making the mashed potato topping: Boil the peeled and cubed russet potatoes in a large pot of salted water for 15–20 minutes, or until fork-tender. Drain the potatoes and mash them with unsalted butter, milk, and a pinch of salt. Stir in the grated cheddar cheese and set aside.

Heat the canola oil in a large skillet over medium heat. Add the diced onions and carrots, cooking them for 5–7 minutes or until softened.
