  • 3 large russet potatoes, peeled and cubed
  • 0.5 cup plain non-fat Greek yogurt
  • 0.25 cup unsweetened almond milk (or skim milk)
  • 2 tbsp grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Place the cubed potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes or until fork-tender. Drain and set aside.
