Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground lamb
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 large Carrot, diced
  • 1 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 1.5 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Penne pasta, uncooked
  • 4 medium Russet potatoes, peeled and diced
  • 4 tablespoons Unsalted butter
  • 0.5 cup Milk
  • 2 cups Shredded cheddar cheese
  • 2 tablespoons Olive oil
  • 0.5 cup Parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large pot of salted boiling water, cook the penne pasta until al dente according to the package instructions. Drain and set aside.

Step 3

Place the diced potatoes in a medium pot, cover with water, and bring to a boil. Cook for 15-20 minutes or until fork-tender. Drain and mash with butter and milk until smooth. Set aside.

Step 4

Heat olive oil in a large skillet over medium heat. Add the diced onion, garlic, and carrot. Cook until softened, about 5 minutes.

Step 5

Increase the heat to medium-high and add the ground beef and lamb to the skillet. Cook, breaking the meat apart with a wooden spoon, until it is browned and no longer pink, about 7-8 minutes.

Step 6

Stir in the tomato paste, beef broth, Worcestershire sauce, thyme, salt, and black pepper. Let the mixture simmer for 5 minutes, then add in the frozen peas.

Step 7

In a large mixing bowl, combine the cooked penne pasta with the meat and vegetable sauce. Mix well to coat the pasta evenly.

Step 8

Spread the pasta mixture into a large baking dish. Smooth the mashed potatoes evenly over the top.

Step 9

Sprinkle the shredded cheddar cheese over the mashed potatoes, and if desired, top with grated Parmesan cheese.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the edges are bubbling and the cheese is golden brown.

Step 11

Remove from the oven and let sit for 5 minutes before serving. Enjoy your Shepherd's Pasta Bake!
