Ingredients

  • 4 cups frozen hash browns
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 pound ground beef or lamb
  • 1 large yellow onion, finely diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 cup beef or vegetable stock
  • 1 tablespoon Worcestershire sauce
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or deep baking dish.

Step 2

In a large mixing bowl, combine the hash browns, olive oil, and a pinch of salt and pepper. Press the hash browns into the pie dish to form an even crust. Bake for 15 minutes, or until the edges begin to brown slightly.

Step 3

While the crust is baking, heat a large skillet over medium heat. Add the butter and let it melt.

Step 4

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.

Step 5

Stir in the diced onion, carrots, and garlic. Cook for 3-4 minutes, or until the vegetables start to soften.

Step 6

Add the tomato paste, thyme, paprika, salt, and pepper to the skillet. Mix well and cook for 1 minute to develop the flavors.

Step 7

Pour in the beef or vegetable stock and Worcestershire sauce. Stir and bring the mixture to a simmer. Let it cook for 5-7 minutes, or until the liquid slightly reduces and thickens.

Step 8

Stir in the frozen peas and remove the skillet from heat.

Step 9

Carefully spoon the meat and vegetable mixture into the hash brown crust, spreading it out evenly.

Step 10

Sprinkle the shredded cheddar cheese over the top of the mixture.

Step 11

Return the pie dish to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.

Step 12

Remove the dish from the oven and let it cool for 5 minutes before slicing and serving. Enjoy!
