Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 0.5 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 medium russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 0.5 cup shredded cheddar cheese
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large pot, bring water to a boil and add the peeled and cubed potatoes. Cook for 15-20 minutes or until tender. Drain and set aside.

Step 3

While the potatoes cook, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.

Step 4

Add the diced onion, minced garlic, and diced carrots to the skillet. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 5

Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Let the mixture simmer for 5 minutes. Stir in the frozen peas and corn and cook for an additional 2 minutes. Remove from heat.

Step 6

Mash the cooked potatoes with butter and milk until smooth and creamy. Season with salt to taste.

Step 7

Spoon the beef mixture into a 9-inch baking dish, spreading it out evenly. Top with the mashed potatoes, spreading them out to cover the beef completely.

Step 8

Sprinkle the shredded cheddar cheese and paprika evenly over the mashed potatoes.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is golden and the pie is bubbling around the edges.

Step 10

Remove the Shepherd’s Hamburger Pie from the oven and let it rest for 5 minutes before serving.
