Ingredients

  • 2 tablespoons olive oil
  • 500 grams ground lamb
  • 1 medium onion, finely chopped
  • 2 medium carrot, diced
  • 2 celery stalk, diced
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 250 milliliters beef or chicken stock
  • 2 teaspoons Worcestershire sauce
  • 100 grams frozen peas
  • 1 kilogram potatoes, peeled and cubed
  • 50 grams unsalted butter
  • 100 milliliters milk
  • 150 grams cheddar cheese, shredded
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Step 3

Remove the lamb from the skillet and set aside. Add the onion, carrots, and celery to the same skillet, cooking until softened, about 5 minutes.

Step 4

Stir in the garlic and tomato paste, cooking for another minute until fragrant.

Step 5

Return the lamb to the skillet, then pour in the stock and Worcestershire sauce. Stir well and bring the mixture to a simmer.

Step 6

Reduce the heat to low and let the filling simmer for 20 minutes, until the liquid reduces and thickens. Stir in the frozen peas during the last 5 minutes. Season with salt and black pepper to taste.

Step 7

While the filling simmers, prepare the mashed potato topping. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well.

Step 8

Mash the potatoes with the butter and milk until smooth. Stir in 100 grams of shredded cheddar cheese and season with salt and pepper to taste.

Step 9

Transfer the lamb filling into a large baking dish and spread it out evenly.

Step 10

Spoon the mashed potatoes over the lamb filling, spreading it evenly and ensuring it reaches the edges of the dish. Use a fork to create ridges in the surface.

Step 11

Sprinkle the remaining cheddar cheese on top of the potato layer.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Step 13

Allow the Shepherd's Cheddar Pie to rest for 5 minutes before serving. Enjoy!
