  • 3 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 1.5 teaspoons salt

  • 2 medium carrots
  • 2 large garlic cloves
  • 1 pound ground beef or lamb
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef or chicken stock
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and cube the potatoes. Add them to a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender.

Step 2

Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, milk, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mash until smooth and creamy.

Preheat the oven to 400°F (200°C).

Heat olive oil in a large skillet over medium heat. Add the diced onion and carrots. Cook for 5-7 minutes until softened.
