Ingredients

  • 2 heads Romaine lettuce
  • 3 cups Baby spinach
  • 1 cup Strawberries, sliced
  • 0.5 cup Blueberries
  • 1 Cucumber, thinly sliced
  • 1 Carrot, shredded
  • 1 Red bell pepper, thinly sliced
  • 0.5 cup Feta cheese, crumbled
  • 0.5 cup Walnuts, toasted
  • 2 tablespoons Honey
  • 3 tablespoons Lemon juice
  • 4 tablespoons Olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and pat dry the romaine lettuce and baby spinach. Tear the romaine lettuce into bite-sized pieces and place in a large salad bowl along with the baby spinach.

Step 2

Rinse and prepare the strawberries, blueberries, cucumber, carrot, and red bell pepper. Add them to the salad bowl.

Step 3

Crumble the feta cheese and sprinkle it over the salad.
