Ingredients

  • 2 pieces chicken breast
  • 2 medium-sized zucchini
  • 1 cup couscous
  • 1.25 cups chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 whole lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Slice the chicken breasts into thin strips and season with salt, pepper, and paprika. Set aside.

Wash the zucchini and slice them into thin half-moon shapes.

Step 3

Mince the garlic and finely chop the parsley. Juice the lemon and set aside the juice.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken strips and sauté for 4-5 minutes on each side until golden brown and fully cooked. Remove from skillet and set aside.
